My first year trying celery too. Mine is about an inch tall right now. I guess we will all learn together. lol

. . . Thanks for the tip about celeriac, Steve. You've gotta love a veggie that stores that long! Do you have a root cellar or did you just put them in buckets of wet sand? I imagine in a fridge they would start to dry out after that long?
The celeriac, along with the carrots and parsnips, are pulled out of the garden in the Fall and the leaves are taken off. Then they are moved to a hole not far from the kitchen door.

The root veggies are lined up tight in this hole (in my herb garden). They are then re-covered with soil and with a pile of tree leaves.

The last of the carrots were moved to the fridge and then used up about 2 weeks ago. There's still some celery root out there . . . we've had a long, hard Winter. That meant that things stayed good in the ground but, also, I wasn't "re-harvesting" them too well when there was 3 feet of snow over the top of them. So, here I am buying potatoes in the Spring so that I can enjoy mashed potatoes and celery root, now. (My own potatoes, stored in the basement, are long gone . . . :rolleyes:. )

Steve, it sounds like you have a great system worked out for storing your harvest. Good luck with your potatoes this year! I found I didn't have enough last year either, and bought more too. I don't typically like potatoes much, but homegrown potatoes are better than I had estimated. :)
