Don't feel bad I've been up past 3am canning the last batch of jam. Sometimes that's just how it goes. I hope it turns out great for ya!

I have pulled those all nighters too, then gone to work. Sure makes for a good nights sleep the next night!

I was so proud of myself! First time freezing corn yesterday! The price of locally grown in local grocery stores got down to 5/$1.00, so I bought 50 ears, fed 3 to the 3 horses, saved 6 for tonight's dinner and processed and froze 15 bags from 43 ears. It's still on sale through Saturday, so tomorrow I'm gonna buy 50 more ears and put away about the same amount.
I didn't have enough ice to cool them, so I used my grocery bags and temporarily froze 3 ears/plastic grocery bag in my chest freezer, until I had blanched them all. It really worked well bc I filled the RH side of the sink with cold water, put the last 9 ears in it, started cutting off the corn, and then added the frozen ears to it as I went.
EVERYBODY was stealing bites and the corn this year is really sweet. We ARE in corn country. The field corn was knee high end of May and is supposed to bring a record crop in 2014. We have had so much rain it feels almost tropical this summer.
I didn't use ziplock bags. I find it's harder to get the air out. Instead, I used storage bags that have twist ties, squeezed out the air, twisted the knotted the tops of the bags, filled about 1/2 full. I'm REALLY looking forward to fresh tasting corn this winter. I've always preferred frozen to canned corn.

We had the first ears of sweet corn for lunch! Sugar Buns.

I had a sliced cucumber sprinkled with apple cider vinegar and forgot my ripe tomatoes and crackers! There's been a long dry spell. Anyway, I'm remedying the oversight with dinner!
