I don't skin them. The skin is thin and has little taste. I do often score the cuke sides with a fork before slicing. That seems to help with thicker skins.

Seedcorn, there are some things that I won't eat without peeling - unless, someone has already sliced it up and put it in my salad. Cucumbers are one thing. Apples are another.

I remember that I didn't even think I liked apples, except baked in a pie. Finally, I just started peeling them. They're fine! Eat 'em all the time.

During the summer, I am eating a good-sized cucumber every day. Eat a couple of Munchers while I'm driving down the road. First I need to get them peeled and then I'm good to go. Still, it is easy to see they have thin skins.

Burpless cucumbers I can eat with peel. Looking for kind I can keep seed.

And yet the best of the nutrients are just under the skin - especially the dark colored skins. Peeling, even potatoes loses some of the good stuff. (Mostly because I just hate peeling potatoes) I am on a mission to stop the waste of peels and nutrients within my family group. Cukes, sweet potatoes, and apples come under that a-peeling mission.

And yes, thanks, digitS, I dropped a bit of green and ended up with a bigger, better monitor that I can read without a magnifying glass. And best of all, I got my computer back! It's been really tough getting along with neither a garden or a computer. Win-win!
