All too true. It's simple supply and demand. If enough people refuse to buy junk and demand healthy food that's what we will get. So long as people demand ready to eat food that's what they will give us but it will be overprocessed and probably stale. They just cover the stale taste with fats, sugars and salt. People get accustomed to that taste and think that's what food is supposed to taste like.
I recently read a study where College students were offered two choices in potato chips. One was freshly made and the other old with slighly rancid oil. The students didn't know which was which but they overwhelmingly chose the taste of the stale chips over the fresh ones. That's what they were used to tasting.

my daughter with her PhD was saying yesterday that she feels she can't afford to buy produce, much less organic. she is also trying to get pregnant. I tried very hard not to get on my band wagon and preach a good long sermon to her. I resisted and just said, we make room for what's important to us.
I wish I had been more conscious and aware of real food when my kids were babies. I made some efforts, but working a tough job inhibits us from making smart choices and promotes easy choices.
I remember letting my kids have lunchables sometimes. they loved 'em - just like boxed mac & cheese.

I hear u JB. Things we would like to have done don't happen when reality hits.

We all try to live the "leave it to Beaver" life but that was fiction. In reality, the kids were working at a young age.

My DH, who has a deep thought now and then, has said to me "You are always doing the best you can at the time." So I guess I can forgive myself for not being a better mom, because I was doing the best I could at the time. With the wisdom I had when I was 22, the choices I made were as good as I could do. Now that I know better, I do better.

One of the things I learned when I was in sales is that folks find the money for things they think they need.

Ever seen the movie The Music Man? Remember the line, "Must create a desperate need for a boys band..."?

As soon as you realize this fact, it makes understanding people much easier. What they spend their money on is what they value and how they approach things.
