This has been a while back, but I wanted to post an update for anyone who was watching.
Back when this thread was going on, I put a batch of butter beans in my food dehydrator. I think I left them a little too long. (Like I do with almost EVERYTHING I put in that thing!) I wasn't sure they would be any good. After dehydrating them, I put them in a zipper baggie and stuck them in the freezer. (Overkill much?)
Anyway, I was curious, so I took out a hand full today and cooked them. I just let them soak in water for about an hour, then got totally bored with that. So put them in fresh water and in the boiler.
I seasoned with bacon grease, a little minced onion, some garlic powder and a dried basil leaf.
They were delicious! Plumped up just fine and tasted great! I'm glad it worked out all right.
