Digit, at Whittier college the cafeteria there had some things practically every day. One of those was Eggplant. At least once a week it was parmesan. Often it was in lasagne. Sometimes though it was fried up with teriyaki steak, both in strips. (Another thing they had at least once a week was shark fin. Not once did I have that!) Sometimes the eggplant parmesan had such a wonderful golden cheese on it, more flavorful than mozarella, but melted and ooey like it, a cheese from mexico. Sometimes I stepped in during "brunch" and they had hors d'ouvres they served on a paper plate. I'd quickly load it and head to my private counterpoint class with Dr. Ochse, and we'd share it while discussing things like the strings should do a long draw of the bow at the end of the A prime phrase as the winds anticipated the following chord tone in common, and why would I give the viola part a flat 9th...have a chicken roll with some fancy name, and a piece of what is it, eggplant? One thing about that place, they sure had food I miss!

SRJC on the other hand, had the best falafel burgers anywhere! Huge selections of yogurts, and sprouts...

I've been known to make an eggplant parmisan and freeze it. Just go ahead and bake it, then wrap it good and stick it in the freezer. I double wrap it in freezer paper.

If you need a fast easy meal (and we all do at some time) just take it out and warm it up. I'm sure eggplant lasagna would work really well for this too.

Whittier College? You and Nixon!

I've got teriyaki sauce in the fridge but have had it there for a coon's age waiting for some sensible use. I'll have to explore this idea with beef and eggplant :).

Shark fin . . . well, I like most fish and don't think I'd miss it ;). But, you and Dick Nixon, this explains so much.

I may try eggplant parmesan or lasagna, but there will have to be meat somewhere. I'm a carnivore.

I wasn't going to grow eggplant......now I will again. Got to get to eating smarter.

i think i'm going to have to go at it again this year. after reading this post, it sounds so good. my aunt grew those that look like big white eggs. they were so pretty.
i recently saw on a cooking show where she made a "sandwich" w/eggplant & mozzerella in the middle. covered w/ tomato based sauce & baked it. i'm going to try to find that recipe again - it sounded good.
