Eggplants for the Garden!

Seedcorn, like you I am also trying to cut down on meat. I make a roasted vegetable medly. I chop up yams, eggplant, potatoe, and carrots. Spread on a cookie sheet and drizzle with olive oil, salt and pepper. Roast in a 400 degree oven till veggies are tender, about 25 minutes. The veggies shrink alittle so I cut my chunks up into 1 1/2 inch pieces. Since the eggplant cooks the fastest make sure that it is cut into bigger pieces than the other vegetables. I also leave the peel on, on the eggplant.

Maybe I'm going to get myself into a lot of trouble with the amount of eggplants that I have? Oh yikes! LOL

and i'm on the search for a regular sized white variety. i have my eye on one that should do nicely in our area called White Star.
Do you sell them? How large is your family to eat that many eggplants? I need your guidance on different "good" ways to eat them. I put out 3 plants and they keep me in eggplant all summer. It's an excellent vegetable to eat, need more ways to eat it instead of meat. I'm not giving up meat, just trying to cut down.
i tend to supply my mom and she LOVES them! so it is basically just me, my mom and dad that eat them when they start producing. last summer was one of my best years getting them to give me fruits. i think i had a total of 12 from 4 plants before the hard frost and Oct31st snowstorm took them out.

my aunt (who passed away last summer) had a wonderful recipe for Eggplant Parmesan that had i known sooner that i would come to love this veggie i would have asked her for her recipe. my uncle loves to grow these just for her and this recipe! maybe he has the recipe kicking around and i can get it the next time i go for a visit.

i've had luck with Black Beauty and Dusky here in the short seasoned northeast, but i usually get them started from a greenhouse and our season is short i may or may not get any to produce for me. the other varieties i got seeds last year to try and just didn't get to starting them. so this year i'm going to get a few plants of each started. i want to find out if there are any differences in taste or if any others will produce sooner than the 2 purple types i usually grow. i know that the white varieties tend to be less bitter and i thought i would try some if i could get them. i plan on adding any extras to my pasta sauce when i go to make it. i figure it is one good way to help get more veggies into the diet.

I too started many more eggplant than I need. I find them to be finicky. Some years I have poor germination or the plants die off. This year every seed has sprouted and they look great. I will give them to neighbors. It will leave enough for bugs to eat some.

Well... I'm HOPING that my son will decide that he likes eggplant and we can start eating it more! LOL I got some from the store once and he HATED them! Of course... he doesn't like store bought beans without lemon pepper either... but will eat them raw straight from the garden!! LOL So I guess we will see! :fl
