It's supposed to clarify it and make it taste smoother.
I LIKE really, really strong coffee - but as I get older, I find that I'm starting to be more & more bothered by the acidity of it.
From the videos, it looks like it is usually done in a pot on the stove and then a strainer is used to catch any floating grounds as it's poured into whatever it's to be served from.

Quote Duck4you: I keep my beans in 4 jars—I like to buy the big package of either Hills Bros Dark Roast or 8 o’clock Italian Roast (when I can find it!). I started with two quart sized jars of Ovalatine, when they still made the glass jars, because that are dark brown glass. I added two quart canning jars. I can buy fruit in quarts at Aldi with a screw on lid that also fits my canning jars, so I use those lids. I store them in my dark cupboard.

Where do you get Hills Brothers Coffee? Folk used it if not using coffee beans, there must I told the girls, have been a reason, but they say they haven't found it~where they've shopped so far.

As said in your post, coffee has a shelf live, Once ground it fails much faster, Father, told me that, but of course I didn't listen and ground a close to a pound and put it in an old type metal coffee can~as I made Surg (coffee) it got worse and worse downhill all the way. I think it got blander and i thought maybe that's the way some people like it, some color, some taste, but very little taste comparing with fresh from the bean brewed.

Coffee~Just as with Chocolate, Chocolate Adorers will eat Dark Chocolate~~~further away from these others might put milk solids, egg, flower, sugared waxes or other fillers because all they are used to is a Hint of Chocolate. Wife likes Milk Chocolate and White Chocolate~White Chocolate isn't chocolate at all.

Remember the girls use to rub, I think it was Coco butter, on at the beach, made them smell like chocolate, but they didn't taste like chocolate.
Mixing coffee with egg as the southeast asians do makes a thing, but not coffee~ Mixing egg with flower can make a bread but it's isn't eggs.

baymule: That wasn't a six shooter, I'll bet that Colt Browning had a 11 rounds in the clip.

If the acidity is too high, it would mean to me the water wasn't hot enough, the oil and acid was leached from the grind and no buffer.
Not that you have to do it this way~We grind our beans to the consistency of Flower, the coffee is brewed the powder goes into suspension, and is served at once, so the Coffee has the feeling, almost, of Coco but the full flavor of the bean.

Coffee sold in America today is a finer grind the was sold here years ago, it's still coarse to our grind.
