Favorite Cold Weather Meal

Since my wife had to work real late yesterday and there was a wee nip in the air... I defrosted 14 chicken drumsticks, then cut the meat + skin at the leg end all around the bone and pushed the muscle downward on the bone toward the thigh end. Next, I used 2 well beaten egg whites and mixed in 6 tablespoons of mayo ( set aside) . Finely diced a large onion and lightly browned it in olive oil, then mixed it into a large portion of bread cruton and spice stuffing. Placed a mound of the stuffing into the middle of a large glass pan, then arranged the drum sticks with bone side up standing around the stuffing , covered the meat side with the egg white/ mayo mixture and liberally covered with panko crumbs. Placed this into a 350* oven for an hour and a half until juices run clear and the panko a golden brown. While this is cooking I made a potato salad. Wa la a standing "Crown Roast " dinner with a glass of white wine that tasted great and was very satisfying. Cherry pie for desert 2 hours later. MMMmmmmm --- OH YEA ! :drool

I'm into my most common winter bowl of soup now, potato!

Just an old picture, it always looks about the same but I don't always make it so that the spoon will stand up if pushed into the middle of the bowl :).

Sometimes there are chopped clams so it should be called chowder ... or, "chowda," I suppose. It might still go by that name if I break up a broiled tilapia filet and put in there.

Variations may include crumbled bacon and I've got the onion family to choose from - sweet, shallots, garlic :). Four varieties of potatoes too but there's not a lot of difference this late in their storage.

What!!

I don't think so, @Nyboy. I've never had Vichyssoise and can't imagine making it!

It's been years since I have made Gazpacho ... I used to like that on a hot late summer day ...

Oh yeah, and leeks!

I've got quite a few leeks to get out of the garden yet ... then there's the celery root. Leeks and celery root together in a creamed soup ... mmm!

As the green tomatoes ripen, a lot will go through the blender and into a soup. I like them with cream and cheddar cheese ...

Buttercup pie and soup ... any wonder I begin to put on weight this time of year!?

Actually I love iced coffee, it's a summertime staple when I'm working.

Still can't warm up to the idea of a cold soup though....

I was typing at the time Cane' posted that, Thistle' ...

Gazpacho is good. I remember tomatoes, cucumbers and bell peppers. I'd sprinkle Tabasco sauce on it ... The veggies are hardly cooked.
