Can I use garlic straight out of the ground? I started to make some salsa tonight and found that I only have one little clove left. I have some garlic in the ground that is nearly ready to pull, but I'm wondering if I can pull some tonight and use it without letting it dry at all.

Hi PotterWatch,

Yes you can use it fresh, straight from the ground -- in fact it is a speciality here in Europe --it costs a lot more & is eagerly awaited. It has a stronger fresher taste (I would use slightly less as it is more pungent) which I love so I sometimes stagger my planting schedule so I can have a succession of the fresh stuff. I also use the green stems in dishes.

I thought you might be interested in these recipes. I was a bit surprised at the first chef saying the fresh was less pungent -- not my experience but maybe mine are the exception......? :idunno

***'scapes' are the green part of the garlic stem....they are curly or corkscrewed. You must try them.
