Good acorn squash recipes?

My stored acorn squash has turned bright orange so it should be at its sweetest right now but all of the ways I know to cook it are getting a bit boring. Does anyone have any good recipes for something different to do with them?

Well, I like mine cooked with mushrooms and scallops. No specific recipe, just bake the squash and while that is cooking, cook some shallots in butter. Then add the scallops once the shallots are done. Mix in cubed cooked squash put it in a baking dish season to taste, top it with fresh grated parm and/or pravolone and bake it until the cheese is all melty.

I baked mine using the following method.

1. cut the squash in half lengthwise and scoop out the seeds and stringy stuff
2. brush the cut side with melted butter and sprinkle with some pumpkin pie spice or apple pie spice, then sprinkle with some sea salt.
3. Fill the cavity with chunky applesauce (I had some homemade that needed to get used up).

Bake at 400 degrees for 30 minutes until the squash is nice & tender.

My DH loved it.

I'm thinking next time instead of filling it with applesauce, I will use chopped apple, mixed with walnuts and some pork or turkey sausage and skip the apple/pumpkin pie spice & just season with a bit of salt. That way, it could be a whole meal.

Substitute them in a sweet potato casserole.

Use them in a version of Leek and Potato soup. You'll need to use a blender or food processor to liquify it.

Vicki, do you have a problem with it drying out like that? I usually bake it cut side down in a little water to soften it before I turn it over and stuff it. Maybe the apple sauce keeps it moist.

Yep, the applesauce kept it nice & moist and I did put an inch or so of water in the baking dish.

I also had rosemary chicken in the oven at the same time & it stayed nice & moist also (boneless/skinnless thighs brushed with olive oil & sprinkled with sea salt, chopped fresh rosemary and some garlic powder.

Along with a salad of fresh baby greens from the garden, it made a nice meal.

All of those sound good. I'll try them all if my acorn squash holds out. I did find that the flavor improves after you hold the acorns long enough for them to turn bright orange all over.

I just came across this, Hoodie!

Not enuf Japanese sweet potatoes for me to do this with . . . well, maybe there are . . ?

Anyway, I was thinking of using winter squash.
