Now I just have to wait and see what happens. I have no idea what to expect with the lettuce, cabbage, green onions, and garlic I planted today. Gotta love experimenting!

The garlic is supposed to be planted late in the season. Green onions? You are talking about from seed? Of course, any onion can be eaten young and I find sweet onions especially good! (Their only problem as a scallion is that they tend to be kind of skimpy until they begin that rapid growth and shoot right past the green onion stage!)
It probably should work well for you to plant any onion seed late. I used to do that in late August but, some years, those onions would bolt to seed in the spring rather than developing bulbs. I really think that this was a result of sub-zero winters. You apparently don't have sub-zero winters so I'd think that those onions should have very little interruption to their growth over the winter months.
I don't know about cabbage but I sow seeds for cabbage-family plants in late August and early September. They make good growth by fall. Some of the bok choy plants can even winter-over but are so damaged by severe frost that they will immediately bolt to seed when the weather warms. They might be fine in your zone.
In my garden, the brassicas grow better in cool, fall weather than lettuce. This seems a little remarkable since lettuce seed will germinate out of very cold soil in the spring! But, maybe it needs the increasing hours of daylight rather than the rapidly decreasing light we experience here, especially.
There's nothing as good as finding out what works in your own garden. Try to keep track of the dates and weather conditions so that you have a good idea of what to expect in future growing seasons! Looking over your fence at what your neighbor is doing is less expensive but, for some odd reason , people seem to run down in their gardening enthusiasm at this time of year! A little fresh autumn air is the antidote!
Ah, to be in zone 8!! I can't imagine why you wouldn't have success with all of those plantings. A fall garden is a great idea for your area. Keep us posted on your progress.
Steve, Im talking about the green onions you buy in bunches at the store, and yes I planted seed. I don't know what else to call them. Do they have another name? I just know that we use a lot of them, so I figure I will try to grow them and see what happens. Had to do something because the gophers and voles killed my squash and beans so I had some space. . . . lol
Lesa, we don't usually get frost very early here, so a fall garden is sure worth a try. I will be keeping my fingers crossed!
