Green tomatoes!!!

Anybody have a favorite relish or pickle recipe? I found one for green tomato sweet pickles- but it takes 3 days to make... What if we don't like them?? Any suggestions would be appreciated!

Hi Lesa, we made this just yesterday...

Green tomato relish

2 lb. green tomatoes, cored and chopped
1 lb. white or yellow onions, chopped
3/4 lb. sweet red peppers, cored and chopped
1/2 lb. tart cooking apples..we used 'Granny Smith', cored and chopped
6 garlic cloves, finely chopped
1 cup apple cider vinegar
1 Tablespoon kosher or sea salt
4 jalapeno peppers, cored, seeded if desired, and finely chopped
(we used MUCH HOTTER PEPPERS)
2 Tablespoons chopped cilantro
1 teaspoon ground cumin (optional)
(we used cumin on one batch last week, didn't care for it)

Combine the tomatoes, onions, peppers, apples, garlic, vinegar, and salt in a large,nonreactive saucepan and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thickened, about an hour.

Stir in the jalapenos, cilantro and simmer for 5 more minutes. Carefully puree the mixture using a stick blender (you know I love my KitchenAid Hand Blender) or in a traditional countertop blender (in batches if necessary) until still somewhat chunky.
We rough chopped all ingredients instead of processing...we like the consistency much better

ladle the hot mixture into hot jars, leaving 1/4-inch head space. Process 15 minutes in a boiling-water canner. Store in a cool, dark place.

My mother used to make a green tomato jam with walnut pieces in it. I wish I had her recipes.

I won't claim it as my suggestion, Lesa, but here's one from "Grist:"

Green Tomato Salsa Verde, Now and Later

I will probably allow my tomatoes to ripen, which they are doing quickly! And, any green tomato casserole that I've made would have been better using eggplant :p . . . but, those are just my tastes.

Another taste is no sweet pickles . . . yeck!

Thanks! I'll keep these on record. I made the 3 day ordeal, sweet green tomato relish- not going to be a favorite. Something tells me, this won't be the last time I have green tomatoes- so good to have some other choices!
