Yeah, that looks like a good one Journey and I'm going to do it with the remainder of my jalapenos. I made pepper poppers the other night which were really good, but I don't like deep frying.

I can't handle the grease so I stuff them, wrap them in bacon and under broiler they go. Love them. Wish I would remember to do them in advance so I could freeze some.

I don't deep fry mine either. They go in the oven and I make a cookie sheet full of them. I can make supper just on jalapeno poppers! The best way to cook them is stuff with your choice of yummy, wrap in bacon, secure with toothpick and smoke them on the grill. :drool I love to stuff them with boudain, wrap with bacon and grill. Mmmmmm.........

Do you cut them in half first? That's the way the recipe I used said to do it, but I cored them out with a veg peeler and stuffed them whole, seemed a lot faster. I would prefer to bake them, so I think next time I'll give it a shot.

I'm in awe Bay. I can't wait for the bacon to fry so I can burn my mouth on the hot bacon/pepper..........

Like the cream cheese to cool my mouth from heat.

I just core them, stuff them, wrap them, broil them, eat them and wish I would have let them cool first......

You need to use rubber gloves, remove all of the seeds and cut hot peppers into tiny pieces to use them. Most people talk a "hot" game, but usually can't stand the super hot peppers any better than you and I.
ALSO, label your hot peppers. I took those plastic 6 inch stakes one year, and spray painted 1/2 of each red and put in the bed to label my hot peppers from my sweet peppers.

I cut the jalapenos in half length-wise and scoop out the seeds. DO NOT RUB YOUR EYES!! I have never worn rubber gloves while doing this, but I can see that it might be the smart thing to do...........never claimed to be smart. I stuff with cream cheese, wrap with bacon and secure with a toothpick. Place on Bar-B-Que pit at one end with a good bed of coals smoking like a hay barn on fire on the other end. After they are good and smoked, scoot closer to the coals to crisp up the bacon. You don't have to use cream cheese, you can stuff the jalapenos with your favorite cheese or whatever your imagination desires.

But the BEST stuffed jalapeno poppers are stuffed with boudain, wrapped with bacon and smoked. :drool Seedcorn! I thought you went to Louisiana on vacation! How did you not eat boudain? Fried boudain balls....... :drool Smoked boudain on the pit...... :drool Smoked boudain jalapeno poppers :drool

You can cook up a big batch of jalapeno poppers and freeze them for later. For some of you, when the snow is deep, you could thaw out a bunch of poppers, heat them in the oven and enjoy!!!
