Hi, I wanted to add make sure you use up to date recipes. If you have an old recipe make sure to find out if it needs up dated. I use the ball blue book, a current one. Also over at garden web in the garden forums is a harvest forum, they have very knowledgeable people that are die hard canners, they can let you know if a recipe is safe.
go to gardenweb.com click on garden forums and then on to harvest!
They have helped me out a great deal, and never get mad at answering newbie questions!

There are several canning books out there that tell you how to hot water bathe it instead of using a pressure cooker if you don't have one. As a general rule it just means a lot more cooking time.
