If you wait until after frost, it will be pretty darn hot. I can see by your name, that you like it hot! Last year when we were grinding ours up- we opened the container and were momentarily blinded! You literally couldn't open your eyes it was so strong! After it sits in the fridge for awhile, it loses its strength.

I once lived near a plant where they processed horseradish. All the workers wore gas masks attached to an airline. Be sure to wear gloves if you process it at home. It can also burn your hide.
BTW don't forget that the greens are also edible. Use them like mustard greens.
