How to keep yellow squash??

I'm afraid I know the answer to this already but here is hoping....

Is there a yummy way to keep yellow/summer squash throughout the year? I'm craving some now and won't be able to have it for another few months. The stuff at the grocery store is ok but nothing like what comes out of the garden.

I have failed with freezing squash until its zucchini. When it thaws its all watery and slopping, and I don't mind it with the zucchini because I throw it all in the batches of zucchini bread I made... so you never knows it all runny when I bake it.

I have successfully canned yellow squash but only when I pickle it... so its good for a relish style squash or pickle chips for sandwiches. Of course, its not good cooking with after I do this. :p

Yup, sorry just too delicate for keeping... If you want squash in the winter, I recommend butternut (not at all like summer squash), but super delicious and very easy to keep. I ate my last one in May, last season.

Lesa, how do you cook butternut squash? I see it in the stores but have never tried it. I'm afraid that I'll just have to wait until this summer and eat a LOT of it.

Super simple. You can either peel it and boil it- or do it the lazy man's way (mine) and wrap the entire squash in foil and bake until done. You will know it is done because it is squishy when you test it. When done, cut it in half, scoop out the seeds ( the chickens love them) and enjoy. I usually add butter and a little brown sugar. Pick one up at the store and see what you think. Just remember the ones from your garden, will be twice as good!

I agree on the yellow squash. I've tried freezing it and canning it. Not worth it either way. I have not pickled it.

I shred zucchini and freeze it in the right amount for my zucchini bread recipe. If I discard the liquid that comes out when it thaws instead of adding it to the zucchini bread, the bread is too dry. So I add it in.

I can my summer squash but only use it in soups, but it is still delicious. I mostly use it for my Minestrone Soup.

Ohhh... I slice mine in half and roast it then get the flesh out to use for other things. Butternut ravioli, butternut soup, butternut sweet pie, ect. Good stuff! But I don't plant until mid-July for those.

I par boil and they freeze the yellow squash in 1/2 inch rounds on a cookie sheet, then package them in plastic bags trying to keep them loose. If you stir fry them with olive oil and oregano you get a pretty good winter treat. Of course nothing beats fresh.
