How to store potatoes over the winter?

It will probably be a fall project since all our $ are going into the garden to fill the boxes I've been building with good garden soil and the beehives I've been building. It's something I've been thinking about a long time once I remembered my Granny's root cellar which was just a tin roof over a hole in the ground with steps going down to it.

That sounds like it would work well. It is always good to try using materials you have on hand, waste not want not.
