I am SWIMMING in Okra--any recipes?

This recipe sounds pretty good. I tried baking some in olive oil and salt and pepper last night, but I didn't like it. I think it's a little bit like tofu, and needs some flavoring to bring out the mild taste.

Wifezilla, I'll eat all of the okra that you leave on the table!! :lol:
Add a little tomato paste and some Summer savory for flavor and you'll have something.

pan fried okra is not slimey.

cousin told me of recipe that sounded YUCK but is great.

Fried 2 pieces of bacon until almost done, then added water, green beans, (for heat, I added hot bananas) then put whole okra on top. Cook till green beans are done, I like it. I over cooked the okra but the ends--I normally cut off--were tender and good. Seems to be good way to use okra past it's prime. I did add a few pieces of ham to it just because it was quick easy way to heat the ham up.

I cook green beans in bacon grease all the time. Not sure I am brave enough to add okra. Maybe I will try it if hubby likes it so it wont go to waste if I get grossed out.

Here's what we do and it's NOT at all slimy. We mix cut okra with corn meal. We cook it in bacon grease, which we save up for the occasion, on LOW on the stove for about an hour, frequently stirring. It's tasty and crunchy. Don't know if I would ever like it in a soup, but I was just at our local "posh" liquor store, with DD, and we saw pickled okra, which the brand suggests goes great with martini's...I think. (Maybe it was something else made with vodka...)
It is especially nice with a turkey and mashed potatoes and gravy and corn. :D

The first time I grew okra, I grew it for the flowers :lol:
Then I found out how nutritious it is and how prolific it produces... (and it's such a pretty plant ... :throw)
... new mission ... get the kids to eat it!
Well, it never really became a 'requested' dish ... but WE like it either slightly cooked, or overcooked to the crunchy stage. The slimy stage seems to be in between... :hu

I like it sliced, dipped in egg, then breaded with bread crumbs, a little salt and pepper... and lightly browned in oil or bacon grease.

Some people like it sliced raw on salads. Next trip to the farmers market, I think I'll pick some up and try it ...

Wifezilla, we use potatoe flour, rice flour or corn meal, it works well that way also. ;)
