I have fennel, now what?

I'm so very lucky to have discovered fennel years ago. I planted about 12 seeds and ended up with 12 plants. Several of them bulbed on me and I used those in a lot of recipes including some sausage pot pie. Since then I have 4 plants in a shady area that only grow the greens and flower heads. I use the greens in things like pasta and potato salad. I also fresh some of the greens to use in my chicken stock when I make it over the winter.

I save the seeds and use that when I make chicken or turkey sausage. However, I may plant more to try for more bulbs.

Its some good stuff!

in spaghetti sause I use the seeds.

so I planted fennel this year and no signs of seeds yet.
Im in zone three. will it make it over the winter?
should I just harvest it for the bulb now?

Good ol' roasted fennel is amazing. When I roast a chicken, I toss chopped fennel, carrots, onions, and celery with olive oil and salt and pepper and put it in the bottom of the pan. Then I put the roasting rack on top and put a seasoned chicken on the rack. Roast at 400 degrees until the chicken is done and you have yourself an amazing meal.
