Peaches are harvested when still hard for shipping. Peaches are picked for eating out of hand at the peak of ripeness which is slightly soft, however, once they start softening they go fast. I'd pick them now and take them inside.
They are soft when ripe-Your peaches are very close. They will fall easily. You may have to pick and cook and freeze. Nothing better during a snowstorm then you summer peaches.
I really see no reason to spray. The tree looks great- and the peaches even better. It is my understanding that nothing will stop fire blight. I have had those trees for years, and have never sprayed. Enjoy your beautiful peaches!
