I usually hang mine inside little brown lunch bags, in a cool, dry place. It helps keep the color by keeping the light out. I will have to try your fridge trick! Southern's herb rack sure is prettier than all of my brown bags hanging from the walls though. :D

Ah the paper bag-fridge drying sounds really interesting, i think i'll try some later this summer. I just have some clothespins hanging from a string in the dining room where i pin my herbs, but i also saw an interesting technique for someone with toomuch time on their hands - they took the clothespins apart, and nailed one side to slats of wood, up near the top where its really spread out, then reattached the other side of the clothespin. It was used at this place i worked where we dried tons of flowers, and we would bundle the flower stems together in groups of like, 5 to 10, depending on the flower, and then hang them from those clothespin racks. It was very quick to clip each bundle up that way.
