I'm so excited I just got a 16 qt pressure canner/cooker at a yard sale for 15.00 :weee. It is in excellent condition all parts accounted for except the manual which I just found and downloaded! The gasket looks brand new. Now I just have to get over my fear of useing a pressure cooker :hide

Be SURE to get it checked out by your county extension office. That will help you get over your fear of pressure canning. :D We took ours down there & they tested it for free. It was really old, but only needed a new gasket & pressure gauge, which was a lot cheaper than buying a new one. The biggest thing the extension office can tell you is if your pressure gauge is working correctly so you know that your food will be preserved correctly.

my advice never ever put a starchy item in a pressure cooker with out enough fat to keep it from exploding ok?

I used my pressure canner to make a HUGE batch of hominy and forgot to add fat

I never used to be afraid of pressure cookers ..and am only afriad of myself using them now!
