Jam failed to gel

Is there anything I can do with jam that doesn't gel? I made some yesterday & it has not set up at all. It's pretty much liquid. Delicious, so I hate to just throw it away.

I made some blueberry jam earlier this year and figured I had made something not quite syrup but sure wasn't jam. I had about a half pint that I just stuck in the refrigerator rather than processing. I figured it would work fine for pancakes...and it did! Blueberry pancakes with a few blueberries scattered on top and blueberry almost syrup/almost jam on top. But the most amazing thing to me, as a first time jam maker, was that after I opened the jars I had put up, it had set and was just about the perfect consistency. A bit of further research online and I learned that jam can take a while to "set". So don't give up hope just yet! :)

Don't waste it! Glazes, syrups, dips, etc. Use it on ice-cream! Years ago I had some plum jam that never set. I used it for everything. I even used it for glazing porkchops on the BBQ.

Do you have the booklet that comes with sure-jell? It gives directions for re- doing jam, if it doesn't set. I'm with the other though- I tried blueberry without sure-jell, and it didn't work. So, it got relabled, as blueberry sauce. Delicious on pancakes, and ice cream.

If you have another pack of sure-jel you can pour all it back into a pot, heat it to boiling and add the sure-jel for unset jams as explained on the instructions with the box of pectin. It will show you how to redo it so it will set properly.

Add some lemon juice to your jam.

Some fruits don't have pectin in them [or not enough] This is the stuff that you need in order for your jam to set.

You can buy pectin from stores [well here in the UK, you can] - or you can add another fruit or juice from a fruit that does have it in. Lemon juice will do the job nicely.

Adding a quarter cup of lemon juice per batch of jam should be enough to ensure your preserves sets. Boil it up again and see how you go.

Just had the same thing happen with my tried-and-true pomegranate jelly recipe. Very frustrating!!! I've been making jams and jellies for many years and have never had a problem getting them to set up. Oh well, there's a first time for everythng, I guess. I'm going to try the fix that Sure-jell has printed in their directions and see what happens.

Some jams take time to set. You may have to be patient. Or enjoy it as it is. TLots of good suggestions to use it. :D Enjoy.
