You haven't yet found someone with experience, Bigredfeather. 500 is a lot of plants for a home gardener.
What I do for about that size is to use 4-pack inserts. There will be 48 cells in a tray (10" by 20").
I am likely to get in trouble here because this is math . . . I will guess that the 2" blocks will fit in a tray at 5 blocks by 10 blocks so you would have 50 blocks in a tray. The trays are needed with both the blocks or inserts and retail for about $2 for the 10 trays. $20
The inserts will sell for about $1.50 at retail. $15
The inserts are re-usable but will probably only last thru 2 or 3 seasons. The Soil Blocker should pay for itself fairly quickly.
