I can't stand ultra pasterized, pasterized is just fine for me. I like to make my own butter, and I can't do that with the ultra pasterized anything!
I try to get regular pasterized cream, and add 1 tbsp of sour cream and some sea salt. Makes for a fabulous butter for breakfast biscuits. Problem is its nearly impossible to find these days
