Ran to Wallyworld last night and picked up 3 bottles. Had one the way home with chicken fingers and jalapeno poppers.... NO HEARTBURN last night - and slept well. :)

Thanks @valley ranch. I was planning to put some fruit in the bottle when it's ready to pour out of the big jar.

Debbie, don't be afraid to start sampling it after it has been going for about 5 days. Richard may drink his vinegary, but most people don't like it that way. Just somewhere in between sweet tea and vinegar. If you let it go too far to be palatable to you, you can pour half out, feed it sweet tea and wait a couple/three days. After you have grown a few batches, you will know by the smell when it's ready.

WHOOT!!! Good News. I've got one more bottle for tomorrow. Then I'll take a taste and maybe fill a couple of the store bought bottles.

I tasted mine today just a sip, it was sweeter then the stores (which I liked) but also zingy. Do you still get all the benefits if you drinking it "younger" less vinegary? What is the youngest that still retains the benefits?

I think so, I was drinking it early at first, but now it's full on vinegar, I like it that way. I've never tasted a culture from the store.

Just reread your post-I don't believe there is any chance of a batch being bad unless mold growing on top, when you start a batch you can add a couple ounces of Distilled White vinegar, to avoid that, I usually do.

It's different from the store bought. Still has a good bit of the tea taste with just a bit of the vinegary zing. Last night I washed one of the Synergy bottles, dropped in a couple of cherries and filled it up. By this morning it had a little carbonation going and seemed to have gotten a bit more zing.
A few more rounds of brewing and aging and this is going to be gooooood.
