Has anyone ever pickled a lemon cucumber? I got some lemon cucumber seeds in a grab bag purchase and have started some of the seed. I watch some youtube videos and they said they are really good cucumbers but that they don't keep well. I was just wondering if you could pickle them.

Don't know, either. Hi 'Dorie :frow!

But, I want to say that I'm only into the 2nd quart of your pickle recipe! Those refrigerator pickles sure have kept well. I did know that more than 3 quarts would be beyond my limits on pickle consumption ;). These are great and the last quart should last until summer.

Now about those lemon cukes - I've grown them for several years. My idea on harvest is to get them before they change to yellow. If the picklers are waiting until they look like lemons, I bet that it effects their shelflife.

The lemon cukes are well worth growing for fresh use.

Thanks can I use regular salt, I know I don't have canning salt
You can use regular salt but it has other minerals in it and may look a little different in color. They taste ok though, I have used it before in a pinch.
