My husband and I went to the local butcher shop to get some fat for rendering, and while we were there we saw the perfect london broil. You can see how fresh it was, the marbling was very fine, it was the super model of the meat world. It was so pretty, and so yummy looking, we bought it on the spot. (We normally have a plan and go get what we want for the plan, not have something sprung on us like that.)
We've got it home (and it's still gorgeous! No buyers remorse here. It's even pasture raised, hormone free and antibiotic free!) and...well...what do we do with it? You can't have the perfect piece of meat without the perfect recipe to go with it.
