@chrissum are they black walnut ? I read an article about tapping black walnut and they make sweeter syrup than maple. Lots of walnut trees? Hmmmmm.... might be worth checking into! Even if all you get is enough for your family, it would be so cool!

Yep, black walnut, pretty common in the state. I have never done anything with the nuts, I like the trees for their size and shade!
