Lesa, just let me know how much to ship a couple of roots! i have my dh convinced i need some in my garden too! he loves hot stuff and that would help with some of his recipes! i have enough pets but the garden could always use a few more 'friends'!

I just did a little reading and they said that one year old roots have the best flavor. You should dig after frost, keep the big root and replant smaller sections.

Interesting link, thistle. The one year old root thing is interesting- Once your patch is established- I imagine smaller roots are growing off the original big roots. I highly doubt I could dig up my old roots without heavy equipment. I have never dug horseradish that wasn't pungent! Generally, it will just about blow your head off!! Here is my patch currently...

I think it will be an interesting experiment- I bet you can harvest and keep that barrel going for many years... I'll be watching your progress! And if you do need more- just let me know....
