@majorcatfish when i roast peppers and pack them in jars to freeze they are so sweet and good, but you can get a ton of peppers down to almost nothing that way as they lose some of the moisture and you're not using liquids to take up space in the jars.

It took me awhile to get caught up on your garden thread. One thing I can say for sure is your DW is one heck of a gardener lol. Your garden is really cranking out the produce, I really like following your thread gives me something to shoot for. So far most of my shots are hitting the dirt short of the target lol.
 
I don't even have a hint of red on any of my miserable tomatoes. Some are only 2 ft tall! Course we have been having over 100 degree temps and no humidity, and certainly no rain.

it is still early for us to see much red in the tomato patch. ours won't be showing much for another month or so... i just have to keep them watered consistently enough to get the decent sized ones we're used to having (and to avoid BER).

The raised beds the corn is doing great, once the dw has the dehydrater open the green onions will be going in. The orca beans look just about ready( background)

The Russian mators they really need a major trellis they have fallen on the ground and have rooted themselves. Glad they didn’t ripen all at once

The first round of corn is done once I get home going to plant more for a late summer harvest

sunflowers for winter seeds around here have to be picked when they're fully formed but not yet fully dry. the various animals and birds will start in on them right away going for those seeds.

and then once picked they have to be dried out well in a very safe place because the mice will find them otherwise. there's also some tiny bugs which like to lay eggs in the seeds so can't bring them in the house. one year i found these bugs in some rosehips i picked and was hoping to make some tea from those. the bugs were so small they had been able to develop in the tiny seeds.
