mashed sweet potatoes for sweet potato pie

DH made mashed sweet potatoes for his work's Thanksgiving luncheon today. There is quite a bit leftover, and I was thinking maybe I could add some eggs & extra sugar & make a sweet potato pie. What do you guys think? Will it work, or will it end up making the chickens very happy?

I've never tried sweet potato pie, so I don't know the recipe. I'm assuming its like making pumpkin pie right? Doesn't hurt to try it.... plus I bet it would freeze well!!!

It should work just fine. Use your favorite pumpkin pie recipe. Or I'm sure you can find one on recipe.com.

You can add butter and brown sugar, put it in a glass dish and top with this: melted butter, brown sugar and chopped pecans. Bake until heated through. We have this every year at Thanksgiving and Christmas. YUM!
