mashed sweet potatoes for sweet potato pie

DH made mashed sweet potatoes for his work's Thanksgiving luncheon today. There is quite a bit leftover, and I was thinking maybe I could add some eggs & extra sugar & make a sweet potato pie. What do you guys think? Will it work, or will it end up making the chickens very happy? :D

I've never tried sweet potato pie, so I don't know the recipe. I'm assuming its like making pumpkin pie right? Doesn't hurt to try it.... plus I bet it would freeze well!!! :D

You can add butter and brown sugar, put it in a glass dish and top with this: melted butter, brown sugar and chopped pecans. Bake until heated through. We have this every year at Thanksgiving and Christmas. YUM!

Hey Joan! Thats exactly how I make mine. But I don't wait for a holiday, I make them all year.
