I have about a dozen sweet banana pepper plants that are heavy with peppers. Does anyone have a good recipe for canning a nice sweet banana pepper jelly they would like to share so I can use all those sweet peppers? I prefer no chilis or spicy hot ingredients, and I would like to can the jelly, not refrigerate it. Thanks!

I have not used this recipe, but it looks like it might work for you.

PEPPER JELLY

3/4 c. green peppers
1 1/2 c. white vinegar
3/4 c. banana peppers
6 c. sugar

Grind or blend above ingredients and bring to a boil. Boil 5 minutes. Add 1 bottle Certo and boil 1 minute. Remove from heat and add food coloring to make green color. Pour into jars and seal. Serve on crackers, spread with cream cheese.
