And, I couldn't get any more "conventional."

" . . . For over 75 years, LIBBY'S has been an American Classic. Indelibly linked with holiday baking tradition . . ."

Those pies with that recipe were made in Mom's kitchen. I remember being given the job of going out to the wood pile and busting up one of Journey's Pink Banana squash so that it could be used in place of what was in the can.

Before the internet, I had to buy a can of pumpkin each year to get the recipe . . . Finally, I copied it onto paper and have the copy in the recipe folder. But now, anyone can get it online!

We grow buttercup squash every year. Our favorite for savory cooking but my sister uses it for her "pumpkin pies". You'd never know the difference.

This year was the first year I made pies from the squash I grew. I had some blue hubbards that I didn't know what to do with (those plants were a random purchase at Home Depot earlier this year). I turned 2 out of 3 so far into delicious pies. The best one, so far was this:

Instead of apple pie spice I put in a tsp of cinnamon, half tsp nutmeg and half tsp of "baking spice" from Penzeys.

Also use this recipe for the crust:

I will certainly be growing blue hubbards next year as well.

And it is much more appetizing than the port-a-pumpkin above!
