Almost every post so far has said what I've always said about zucchini, you have got to flavor it with something else or you will never eat the stuff!!!!!
i have a zucchini quiche recipe i've always liked. it's an old Bisquik recipe and is 'crust-less' since you mix the stuff into the egg/cheese/zucchini mixture. this is what i use my over-sized zuke's for. just grate up the zuke and store any extra in the freezer for later.
That vvas me, Nyboy, and the reason the post disappeared vvas because it occurred to me vvithin minutes after posting that Bay's recipes may be proprietary or Family secrets so I did an edit/delete to that post...

@Sam BigDeer I am delighted to share! You can look at my past posts that I have started and the recipe is there. I would post link, but can't do it on this phone. Look for zucchini cobbler, as far as the lasagna, just slice zucchini length wise, real thin, and substitute for pasta noodles. It does get a little juicy, this year I am going to dehydrate the squash. It can soak up the tomato juice and be easier to store.
