Of Garlic and Lessons Learned...

Those dried garlic 'chips' store for years in zip lock bags. They can easily be ground in a blender, for fresh garlic powder on demand. I like to grind them lightly, sift out the powder, and put the larger pieces in a spare pepper mill. Fresh ground garlic is as wonderful as fresh ground black pepper. :drool

Small bags of those garlic chips make great gifts for my adult children (who really appreciate them) and for friends who love to cook.

I posted this elsewhere, but with 5 bulbs I ended up with 1/2 pint's worth of dried garlic. DH said that the Excalibur instructions take you to rubbery, but I was concerned about mold in our Very Wet climate here, so I gave them an extra 8 hours to "break apart" dry, so as to store better.
Any experience with this discrepancy in dehydrator instructions?
