1 cup water
6 cups pears Peeled and chopped
1 tablespoon lemon juice
1 tablespoon of finely grates fresh ginger
(Or 1/2 tsp of the powdered stuff)
1 package powdered pectin
1 cup honey
3 cups sugar
Combine pears, water and lemon juice in large saucepan. Simmer until soft, about 10-12 minutes.Add pectin and bring to a boil, stirring constantly. Add Ginger and honey and sugar and return to a rolling boil. Boil hard for 1 minute.
Remove from heat and add to sterilzed jars. Water bath for 10 minutes to process.
