Ripe, yes, but not edible for most of us banana munchers. Ripe (over-ripe to me) bananas are best used to make cakes, breads, or cookies. The more solid texture of a yellow banana is what the taste buds consider just right here.

When my wife bakes banana bread, etc. , she only makes sure that the banana is beyond fully ripe, as in totally dressed in black. When pealed the banana itself is mushy. This gives the backed goods the best flavor . As proof, she has won many a fair competition doing this for backed deserts. :drool

I don't know if there is much that we take the peel off of, I know bananas. I'll even eat winter squash skin sometimes if it isn't too tough (nobody else does). I couldn't imagine 90% of the fruits/vegetables that we eat that do have peels without them, sometimes it's actually the best part.

I still remember when I was about 8 years old, our school bus driver bought a bushel of apples just before Christmas, and let each kid take an apple as they got on the bus to go home. I was saving mine for later, but I watched in amazement as one kid ate his whole apple, core, seeds and all. I just got the impression that he didn't get apples very often, but maybe he was just being extra health-conscious!

Mary is friendly, bright, and politically correct.
In my house, she makes the mess, she cleans it up. I do meals and kitchen duty for meals. Snacks are not on the menu or clean up schedule.
Ridge and Smart Red thank you for being so nice to me. :)

But Red, I really didn't make a mess and cleaned it up in your house. Really I didn't. :idunnoHa

@goatgurl , that banana peel in the smoothie must have been ... something! I'm glad you don't do that anymore. DDT and other things like it are still legal in some South American countries. Still, I gave up on peeling tomatoes for sauce. The blender disappears the skin so nicely.

Let's see, the USDA says 100 grams of banana has 358 mg of K and 89 kcal. The same amount of bok choy has 252 mg K and 13 kcal.

A 100 gram unglazed cake doughnut ....... has 134 mg K and 434 kcal ... !

I may have to start eating lots of doughnuts so I won't starve to death!

who has a friend who will eat the entire apple keeping just the stem to clean his teeth, i guess. he's also about 100+# overweight so taking any dietary guidance from him would probably be illadvised.

I saw a show with David Pogue about body weight, strength, longevity, and diet.

He was matched against this guy who would throw most of what was not peeling away! It would cut down so much on my food intake. I'd have to be really hungry to eat!

Maybe that would be good ... Had uncooked honeycrisp and half a peach with my raisin bran cereal and coffee this morning. Apple and peach, peeled.

I am so sorry, @digitS!

The only way someone would get a peeled apple from me is a toothless toddler, a school child with loose or missing teeth, or senior citizens with the same dental conditions.

Peeling peaches? Whatever for? Although, I do know a few people who seem to be bothered by the fuzzy texture. As a child I heard a story about a starving family during the Irish potato famine. It seems the father ate only the peelings so that his wife and children would have more to eat. The added nutrition just under the skins kept him healthy and able to work to support his family.
