I wonder if you used some stock along with the water in the pan to give it even more flavor?
Ours go under the broiler brushed with some olive oil (I think my wife's the one who came up with that idea) and chars them a little bit. That makes a BIG difference in flavor too. Remove the stems toss the whole thing in the blender and strain off the seeds. We do that for soup and pasta sauce.
