Thanks guys! I went with the general consensus and picked it today. Got quite a few really nice looking ears out of four 12' rows. It's called McCormack's Giant Blue Dent corn. Definitely gonna plant it again. I'll post a pic over in Steve's color in the garden thread here in a bit.

I will try that black layer test. I did poke a few ears with DH's digital moisture meter that we use for firewood. Got readings between 19-31%. Got all the ears shucked and laid out on a screen in the basement with the dehumidifier running too. Does anyone know what it should dry down to be ground for flour?

DH mowed/weedeated the garden for me. I left two caged tomato plants standing because they're still loaded and hopefully will turn before the frost comes. I am so happy to see that mess gone! Now I don't have to be paranoid that something is going to jump out at me when I go to put the chickens to bed at night. :ya

14% or lower. Unless you are going to grind and use immediately. In which case, I'd soak it in however much liquid you would use and grind while soft.

Thanks, @seedcorn . I'll probably grind it in small batches as needed, and put the rest in the freezer. I keep all of my flour and grains in the freezer so they'll keep longer anyway.

I will have to post a pic of those first blue tortillas when I get them. ;)

If allowed to air dry, shelled corn doesn't need to be frozen.
