Potatoe storage help needed!

I grow about 300 pounds of 'Red Pontiac' & store them in plastic bread trays in the garage (bear in mind that I live in a hot, humid climate) & use a fan to move the air through the racks during the day. They stay good for 6 months with this method.



I am also going to try slicing some & dehydrating them next year (they will then be vacuum packed) as an experiment next year.


That's impressive Sam! How do you keep them from greening up on you?

i have a combination storm cellar/storage cellar and put the potatoes in plastic crates that look a lot like Sams. the whites and sweets both store really well down there. so far none have frozen.

I dehydrated hash brown potatoes and just put them in a half gallon Kerr canning jar. I put dehydrated sliced potatoes in a Food Saver bag and couldn't tell any difference in the keeping quality of the jar or the bag.
