Potatoes for chips

Can anyone recommend a variety of potatoes that make great chip? My favorite chip maker uses NorValley potatoes. I haven't found this variety for sale. NorValley sounds like a brand. Does anyone know what type of potato it is or can suggest another chipping variety?

I'm not so sure. I'm sure you'd want to use a good one that doesn't get soggy when cooked. So probably not red or white. I would just use russet myself... those are what I make my own fries out of.

My brother also said you can't go wrong with russets for chips. His master thesis was on the economic impact of potatoes so he's my local potato expert even though I don't think he's ever had a garden.

I found this USPB/SFA chip trials article and one of the potatoes mentioned is the Kennebec which is a white potato that Ronniger Potato Farm sells. I'll have to try that also.

Yeah, I agree that russets would probably be good. We use them for fries all the time and they turn out good (alot better than other potatoes we have tried).
