Sauteed Snowpeas with prosciutto and onion

:ya I made a great dish today with a wonderful harvest of snowpeas straight from the garden :)
:drool Yummm!! this was really good ;)

Here's the recipe:


Ingredients:

1 large onion, sliced thinly
About 3/4 cup prosciutto either sliced or in cubes
Snowpeas, removing the thin "string"
Olive oil 3-4 Tablespoons (add more if needed)


Directions:

Begin by getting a large sauteed pan over med. heat, add olive oil then add the onions. Cook onions until they are translucent, then add the prosciutto. Cook this mixture until onions are golden and prosciutto is a little render.
Next add in the snow peas (you could also use shelled fresh peas or mix of both)
Add a little water to the pan to create a little steam that will help cook the snowpeas, Cook for about 10 minutes or until the snowpeas are so tender they seem to melt in your mouth.
Add a little salt if neccesary the prosciutto is pretty salty so you might not need to add any.

Greenthumb18, I am so looking forward to snow peas and snap peas! You have made me even more anxious to see them on the table :)!

There's always a green onion or shallot handy and soon, the sweets! It almost seems like bacon becomes the only meat in the fridge during the growing season - bacon with greens, bacon with stir-fry, bacon with peas . . . with green beans. Bacon: working-class prosciutto ;).

Oh no problem, i even like to eat the peas fresh from the garden by itself raw, its like garden candy so sweet and flavorful.

I'm almost done harvesting all peas i put in this spring, until the fall harvest.
