the Persian salsa came out fantastic
it is just a salsa made with roasted mix of hot and sweet peppers onions and tomatoes lots of fresh parsley, oregano, thyme, mint and cilantro
a few good shots of the chive flower vinegar and a small handful of sea salt
it just needs some olive oil (I am out!) but otherwise is perfectly perfect
I feel like I should work my way through all the colors of tomatoes
I like to eat the salsa on pita bread with big pieces of Bulgarian feta
