Deeply Rooted
I find that the David Austin roses are really the best for hardiness, smell, and form. They have all the loveliness of the old fashioned ones with the recurrent bloom.
My favorite rose for letting go is Rosa Muchata. It gets really big, like 12' by 9'. It has single petaled white flowers that are really abundant. The smell is musky and can be enjoyed from 10+ feet away. It has a lovely form and will take some shade too!
Other favorites that are great are:
Jude the Obscure (orange, they have been painted for centuries)
St. Cecilia (it's like candy!)
Citrus tease (everyone raves about this pink easy care rose)
Lime sublime (creme colored rose with great scents)
I have 12 roses right now. This is really smallf for me, but the farm is a lot of work and the deer are my sworn enemy. My goal is to have 100s
Go to Heirloom Rose Farm in Oregon. Their site will educate you immensely and you will be amazed at the categories they have.

Oh, and if cold is a problem try Buck's roses.
