the baskets worked out perfect. able to get one and half packs into one.. need to make a few more racks..

we did crisp the skin in the deep fryer sorry no photo of that it was every person for themselves as they come out....

you missed one....:drool

did them using 50/50 mix of apple and hickory chips soaked overnight .... used a beer in the water pan.
cooked around 235-250* for 2.5 hours, moved the racks around every 30 minutes for even cooking..
used cowboy lump charcoal from lowes.....great stuff

will increase the wood chips in the fire box next time...for a deeper smoked flavor
