So I have three quarts of apple pectin in the freezer

Back in the fall i cooked and strained all the surplus apples I didn't have time to properly can. I have three lovely quarts of what amounts to pectin in my freezer. I probably should do something with it soon. The stuff has no strong flavor of its own so it can be a nice base for all kinds of fun things. I figure I'll make a batch of rum raisin jelly (a popular gift among friends), I brought some habenero peppers and ginger plants inside for the winter so I might use those or maybe some herb jellies (rosemary?). Anyone have any interesting ideas?

pears, guavas, plums, and oranges and other citrus fruits contain large amounts of pectin. here in the Philippines, since apples are very expensive, we use guavas, a great source of fiber as well.
