I do it real life tho! 😂 This is my humble opinion! I like to eat the parsley leaves, but I do not care for the stems - wrong texture.....

i don't mind bitter things so i'm not one to trust for encouraging others to eat things as i do. that said there are several Mediterranean dishes i like which have a lot of parsley in them (Tabouli salad or Tabbouleh) and is one of my favorites and when i make it it's about 95% parsley.

I don't have a recipe that heavy for parsley, but I do have a shrimp scampi recipe where I add about 2 -3 cups of freshly cut parsley leaves to the mix. They shrink to almost nothing once they are cooked.
