I have been somewhat perplexed for several years about a common weed around most everywhere in the US. It's an invasive known as Goatweed or Salsify.

What was perplexing was that some folks eat Salsify roots and it is even grown as a farm crop. Could the roots of this Goatweed be what people eat? I could hardly believe it, if for no other reason than that it's a very scrawny root.

For several years! Finally doing a little research as I see its flowers open on the south slope of a nearby hill. I learn that this is a relative of the Black Salsify valued for its roots, not the "real" thing. The scientific name: Tragopogon dubius. That's right! What I have been dubious about all this time is a "dubius" Salsify.

I've always been curious what the 'real' salsify tastes like. I've been close to ordering seed a few times, but a perennial veg would be difficult to find a permanent place for. They look good fried in a pan.
